La Cena Del Club

In honor of Cinco de Mayo, this month's dinner club had a Mexican theme.  It was so much fun!  Our course was appetizer.  We went with bite sized black bean cakes with a spicy sweet potato sauce topped with a lime sour cream drizzle and avocado garnish.  We also made chipotle chicken and avocado eggrolls with a homemade salsa.  I was really happy with how both turned out.

 

Per usual, the hosts went all out and the house and table looked beautiful.

Everything was delicious.  After dinner we were all in for a surprise.  The hosts had arranged for dance instructors to come in and teach us how to salsa dance.  I loved the expressions on the faces of the men.....I don't think they were too excited.  But in the end everyone had such a great time.

 

I have an issue with not knowing when to keep my mouth shut.  I stupidly asked a question after the lesson and the instructor forced me into dancing with him. 

 

My face in that last picture cracks me up!  Such a great night.  I look so, so forward to each time we get together.  Good friends, good food, and an over all good time.
